BALVENIE DCS CHAPTER 1: DISTILLERY STYLE
David C. Stewart MBE is one of the longest serving malt masters in the Scotch whisky industry, having worked with The Balvenie for 54 years. As he contemplates retirement it’s important to David that he passes on his knowledge so others can follow in his footsteps and continue to produce a whisky of exceptional quality. The Balvenie DCS Compendium is David’s handover of this knowledge in both written and liquid form. David has selected 25 extremely rare and significant vintage single cask whiskies to be released over five years, capturing the breadth of his achievement and contributions to his craft.
The Balvenie DCS Compendium Chapter One celebrates that essence by focusing on the sweet and honeyed character of the whisky and how this distillery style develops over time. The rare whiskies in Chapter One range in age from nine years old, the youngest ever single cask whisky The Balvenie has released to date, to 46 years old, to demonstrate how The Balvenie’s distillery character evolves at different ages over time.
The Balvenie DCS Compendium Chapter One include 5 bottles:
✦ Balvenie 1968 (46 years): was filles 11th June, 1968. It bears the aroma of malt and oak mingle with brown sugar, vanilla toffee, candied orange, cinnamon and ginger. Velvety flavored with blossom honey, oak vanilla, a touch of citrus and long-kep spiciness. Finish gentle, lingering waves of vanilla and oak spices.
✦ Balvenie 1978 (37 năm): was filled in 11th March, 1978. Whisky brings fragrant notes of lemon peel, layered with heather honey and mild oak spices. Taste: fresh citrus, candied orange, a touch of maple honey sweetness, gentle spice and subtle oak vanilla. Finish: delicate citrus, subtle spices and soft oak.
✦ Balvenie 1985 (30 years): was filled in 12th February, 1985. Whisky 30 years has fragrant notes of lemon peel, layered with heather honey and mild oak spices. Taste: Fresh citrus, candied orange, a touch of maple honey sweetness, gentle spice and subtle oak vanilla. Finish: delicate citrus, subtle spices and soft oak.
✦ Balvenie 1997 (17 years): was filled in 9th June, 1997. NOSE: Malty, with vanilla toffee, honey and a burst of cinnamon followed by butterscotch. TASTE: Beautiful depth of flavour with toffee sweetness, oak vanilla, runny honey and a gentle layer of spice. FINISH: Rich with a creamy sweetness and gentle spices.
✦ Balvenie 2005 (9 years): was filled in 6th May, 2005. NOSE Fresh, tangy orange peel, notes of barley sugar, vibrant vanilla and a touch of honey. TASTE Sweet maltiness, fruit salad in vanilla syrup, a touch of citrus and delicate blossom honey. FINISH Gentle with malty notes and orchard fruits.
