The 1989 Dalmore Constellation is the final version of the 1980s in the Dalmore Constellation series. This 22-year-old version was distilled on May 2, 1989 in barrel number 06. And for its life, the 1989 Dalmore Constellation spent his first 17 years maturing in an old bourbon barrel before being shipped to a sherry Oloroso barrel in Mat Jerusalem until complete. After the last five years in the barrel sherry has endowed whiskey a beautiful balance and richness that can only be achieved using these exquisite casks. That unique maturation process provides the version with an elegant amber-yellow spirit and becomes the unique single malt version from the Scottish Highlands distillery.
Only 327 bottles of Dalmore Constellation 1989 were released globally, each bottle is bottled at a natural concentration of 53,0% ABV, with a volume of 700ml. Crafted in a hand-blown crystal, created by artisans of Baccarat, famous French crystal house. Each bottle is engraved with the year of distillation, age, number of barrels and decorated with a silver royal deer, a symbol of the Dalmore Distillery from 1867.
- Rich taste
1989 Dalmore is amber gold with shimmering straw yellow accents. The aromas of macaroons, spicy cinnamon and asparagus butter linger before tarts, freshly cut barley bread, lemon jam and vanilla rind. Taste of ripe pineapple, Ogen melon, peach syrup and fig. Whispers of fresh coffee, balsamic vinaigrette, orange peel and black treacle bring a great conclusion.
