DALMORE L’ANIMA 49 YEAR OLD
In the culinary world, whisky is gradually becoming an endless inspiration to bring the soul of a solemn meal. Spirits are turning more and more to the culinary world for inspiration, so when Dalmore wanted to do something special, it’s not surprising Master Distiller Richard Paterson would find a kindred soul in Massimo Bottura, whose three star Michelin restaurant Osteria Francescana in Modena came in number one of the World’s 50 Best Restaurants list in 2016 and 2018. “When Massimo and I first started discussing this collaboration it was clear we shared a passion to celebrate life by creating incredible food and drink,” Paterson said. Italian cuisine and single malt scotch are a rare enough combination to begin with, but Dalmore decided to take exclusivity one step further with its Dalmore L’Anima Aged 49 Years.

Scotland’s The Dalmore distillery has at its disposal the immeasurable talents of master distiller Richard Paterson who, over the years, has repeatedly raided his employer’s old barrels in search of single malt treasures. Now, in what is set to become a one-off release from here that’s tied to raising funds for a non-profit, Paterson has teamed with acclaimed Italian restauranteur Massimo Bottura to announce The Dalmore L’Anima Aged 49 Years.
The Dalmore L’Anima Aged 49 Years, according to those behind it, is a one of a kind bottling that was created from three unique assemblages which were brought together by Paterson “using some of the distillery’s most exquisite casks. A marriage of rare Dalmore expressions which were previously matured in freshly emptied small batch bourbon barrels, Gonzalez Byass casks which previously held 40 year old ’Pedro Ximenez’ sherry and Graham’s Vintage Port Pipes.”

L’Anima, which means soul in Italian, this is considered a unique version created. Only 1 bottle has been released worldwide, a bold fusion of Italian cuisine and precious scotch whiskey.

With experience working with Paterson, Massimo said, “When Master Distiller Richard Paterson and I met in Modena, it was a true meeting of the minds,” Bottura said in a prepared statement. “Our creative processes seamlessly fused together with our passion and deep understanding of flavor complexity and connection to create a very special bottle that brings together some of the most precious scotch whisky barrels in the world.”
“The coming together of our passions allowed me to create a whisky that is bold, different, full of warmth and completely unforgettable – it is a true reflection of the love, blood and balsamic that unites us.” added Paterson.
This particular usquebaugh embodies aromas the likes of chocolate, raisin and marmalade. On the palate, expect hints of creme brûlée, coffee and pecan pie; while notes of blood orange, figs and treacle finish off what would make for a drinking experience like no other. L’Anima is bottled at 41.5% ABV and packaged in a crystal decanter with a sterling silver collar, and a matching silver signature Dalmore stag. A bespoke, masterly handcrafted cabinet fashioned from Italian olive wood, American black walnut and ebony completes the exterior – one that is certainly fitting for what lies within.
